Winery

The first two vintages were made using the neighboring Denner Winery, while renovation of an existing building on the Jada Estate was completed for harvest 2007.

Built on a perfect hillside, the winery was a natural to utilize gravity flow. At no point are grapes pumped or propelled with augers. Stainless shaker tables are used to spread fruit out for hand sorting both in and out of the destemmer. The destemmer was chosen for its gentle handling of the grapes and adjustment capabilities. Small stainless open-top fermenters were designed and built specifically for the winery to match vineyard blocks and lot sizes and maximize surface to volume ratio. A basket style press was chosen for its gentle pressing of the grapes without excessive seed tannin extraction. Dual barrel rooms are utilized to accommodate different temperature requirements through the winemaking process.

The winery is an extension of the vineyard and is designed to facilitate our dedication to producing wines of exceptional character.
